Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray.
- Thinly slice the zucchinis into rounds. Place them in a colander and sprinkle with salt. Let them sit for 10 minutes to draw out excess moisture. Pat dry with a paper towel.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and set aside.
- In a large bowl, combine the sliced zucchini, sautéed spinach, crumbled feta cheese, grated Parmesan cheese, Greek yogurt, dried oregano, dried basil, salt, and pepper. Mix well to ensure all ingredients are evenly distributed.
- Transfer the mixture to the prepared baking dish, spreading it out evenly. Press down gently to compact the layers.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
- Let the casserole cool for a few minutes before slicing and serving. Enjoy it as a main dish or a side with your favorite protein.
Notes
Use fresh ingredients for the best flavor and texture. For a cheesier casserole, sprinkle extra feta or Parmesan on top before baking. You can assemble the casserole ahead of time and refrigerate it until ready to bake. Customize by adding other vegetables like bell peppers or mushrooms for extra flavor and nutrition.
