  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tbsp fresh basil, chopped

  • 2 cups cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp balsamic glaze (optional, for drizzling)
  • Additional fresh basil for garnish

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface. Transfer it to the prepared baking sheet and use a fork to prick the pastry all over, except for the edges.
  3. In a bowl, combine the ricotta cheese, grated Parmesan, minced garlic, chopped basil, thyme, salt, and pepper. Mix well until all the ingredients are fully incorporated.
  4. Spread the herbed ricotta mixture evenly over the puff pastry, leaving a small border around the edges. Arrange the halved cherry tomatoes on top of the ricotta, pressing them lightly into the filling.
  5. Drizzle the olive oil over the tomatoes and season with a pinch of salt and pepper. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the tomatoes are slightly blistered.
  6. Remove the tart from the oven and let it cool for a few minutes. Drizzle with balsamic glaze if desired, and garnish with fresh basil. Slice and serve warm or at room temperature.

Notes

Use room temperature ingredients for easier handling. Customize herbs like oregano or rosemary for different flavors. Add toasted pine nuts or almonds for extra crunch. The herbed ricotta filling can be made a day ahead.
