  • 1 batch of prepared cornbread (about 8x8 inch pan), cooled and crumbled
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 packet ranch seasoning mix
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced (any color)
  • 1/2 red onion, finely diced
  • 1 cup shredded cheddar cheese
  • 6 slices turkey bacon, cooked crispy and crumbled
  • 2 green onions, sliced
  • Fresh parsley for garnish
  • Salt and pepper to taste

Method
 

Instructions
  1. Prepare the dressing by whisking together mayonnaise, sour cream, and ranch seasoning in a medium bowl until smooth and well combined. Set aside.
  2. In a large glass trifle bowl or clear serving dish, create your first layer with half of the crumbled cornbread.
  3. Spread half of the dressing mixture over the cornbread layer, ensuring even coverage.
  4. Layer half of the corn, black beans, tomatoes, bell pepper, and red onion over the dressing.
  5. Sprinkle half of the shredded cheese and crumbled turkey bacon over the vegetable layer.
  6. Repeat the layers with the remaining ingredients in the same order: cornbread, dressing, vegetables, cheese, and turkey bacon.
  7. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld together.
  8. Just before serving, garnish with sliced green onions and fresh parsley.

Notes

This salad tastes better when made a day in advance as the cornbread has time to absorb the dressing flavors while maintaining its structure. Perfect for make-ahead preparation.
