  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter, softened (optional, for spreading on bread)

  1. In a small bowl, mix the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Stir until well combined and creamy. Set aside.
  2. Wash the cucumber and slice it thinly. For extra crispness, pat the slices dry with a paper towel to remove excess moisture.
  3. Lay out the slices of bread on a clean surface. If desired, lightly butter each slice. Spread a generous layer of the herb cream cheese mixture onto each slice of bread. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread, cream cheese side down, to form sandwiches.
  4. Using a sharp knife, carefully trim the crusts off the sandwiches for a classic tea sandwich look. Cut each sandwich into quarters or halves, depending on your preference. Arrange the sandwiches on a serving platter and garnish with additional fresh dill or chives if desired. Serve immediately or chill in the refrigerator for up to an hour before serving.

Choose the right bread: For a traditional cucumber sandwich, use soft white bread. However, whole wheat or multigrain bread can add a nutty flavor and extra texture. Keep it fresh: To prevent the sandwiches from becoming soggy, assemble them just before serving. If you need to prepare them ahead of time, store the cream cheese spread and cucumber slices separately and assemble right before serving.
