Ingredients

Ingredients
  • 8 slices of soft white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz (225g) cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp unsalted butter, softened (optional, for spreading)

Method

Instructions
  1. In a mixing bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix until smooth and well blended. Taste and adjust seasoning if needed.
  2. Wash the cucumber and slice it thinly. For extra crispness, place the slices on a paper towel to absorb any excess moisture.
  3. If using butter, lightly spread it on one side of each bread slice. Spread a generous layer of the herbed cream cheese mixture onto the unbuttered side of four bread slices. Arrange the cucumber slices evenly over the cream cheese. Top with the remaining bread slices, cream cheese side down.
  4. Using a sharp knife, trim the crusts off the sandwiches for a clean, elegant look. Cut each sandwich into quarters or smaller rectangles for tea sandwiches. Arrange them on a platter and serve immediately.

Notes

Choose soft, fresh bread for best results. To prevent sogginess, assemble sandwiches just before serving. For variations, add thinly sliced radishes or a sprinkle of smoked paprika to the cream cheese mixture.
