  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter, softened (optional, for spreading)

  1. In a mixing bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix until smooth and well combined.
  2. Using a sharp knife or a mandoline, thinly slice the cucumber into even rounds. Pat the slices dry with a paper towel to remove excess moisture if desired.
  3. Lay out the slices of bread on a clean surface. Lightly butter one side of each slice if desired. Spread a generous layer of the cream cheese mixture onto the unbuttered side of each slice. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread, cream cheese side down, to form sandwiches.
  4. Trim the crusts off the sandwiches using a sharp knife. Cut each sandwich into quarters or smaller rectangles to create elegant finger sandwiches. Arrange them on a platter and serve immediately, or cover with a damp cloth and refrigerate until ready to serve.

Notes

Choose soft bread like white or wheat for best results. To prevent sogginess, assemble the sandwiches no more than an hour before serving. For a variation, add thinly sliced radishes or smoked paprika to the cream cheese spread. Garnish with fresh dill or chives for added elegance.
