Ingredients

Ingredients
  • 4 cups fresh watermelon, cubed and seeded
  • 1 cup fresh lemon juice (about 6-8 lemons)
  • 1/2 cup granulated sugar
  • 1/4 cup fresh mint leaves, plus extra for garnish
  • 4 cups cold water
  • Ice cubes for serving

Method

Instructions
  1. Prepare the watermelon puree. In a blender, combine the cubed watermelon and blend until completely smooth. Strain through a fine-mesh sieve to remove any pulp, pressing with a spoon to extract all the juice.
  2. Make the mint syrup. In a small saucepan, combine 1 cup of water with the sugar and mint leaves. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let steep for 15 minutes to infuse the mint flavor.
  3. Combine the lemonade. In a large pitcher, combine the watermelon juice, fresh lemon juice, mint syrup (strained), and remaining 3 cups of cold water. Stir well to combine.
  4. Chill and serve. Refrigerate for at least 30 minutes to allow flavors to meld. Serve over ice with fresh mint sprigs for garnish.

Notes

Choose ripe watermelon for natural sweetness, use fresh lemon juice for best flavor, bruise mint leaves before adding to syrup to release oils, and chill for several hours for optimal flavor development. Adjust sugar to taste preference.
