  • 12 oz salmon fillets, skin removed
  • 8 oz fettuccine or linguine pasta
  • 3 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried dill
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
  1. Cook the pasta according to package directions in salted water. Reserve 1/2 cup of pasta water before draining.
  2. While pasta cooks, pat salmon dry and season with salt, pepper, and paprika. Heat olive oil in a large skillet over medium-high heat. Cook salmon for 4-5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Pour in heavy cream and bring to a gentle simmer.
  4. Add Parmesan cheese, stirring constantly until melted and smooth. Stir in lemon juice and dried dill.
  5. Add cooked pasta to the cream sauce along with fresh spinach. Toss until spinach wilts and pasta is well coated. If sauce is too thick, add reserved pasta water a tablespoon at a time.
  6. Flake the cooked salmon into large chunks and gently fold into the pasta. Serve immediately garnished with fresh parsley.

Notes

Choose fresh salmon fillets for best results, don't overcook the salmon as it continues cooking after removal, reserve starchy pasta water for silky sauce, and customize with different greens like kale or arugula.
