- Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil or non-stick spray.
- Thinly slice the zucchinis into rounds, about 1/4-inch thick. Place them in a large bowl.
- Drizzle the zucchini slices with olive oil and add minced garlic, salt, pepper, oregano, and basil. Toss gently to coat evenly.
- Arrange the zucchini slices in the prepared baking dish, slightly overlapping them. Sprinkle the breadcrumbs evenly over the top, followed by the shredded cheddar, mozzarella, and grated Parmesan cheese.
- Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and golden brown.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
Notes
For the best texture and flavor, use fresh, firm zucchinis. For extra crunch, mix the breadcrumbs with a little melted butter before sprinkling them over the casserole. You can assemble the casserole ahead of time and refrigerate it until ready to bake.
