  • 1/2 cup mayonnaise
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 2 tablespoons melted butter

  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, sauté the chopped onion and garlic until softened. Add the sliced zucchini and cook for 5 minutes until slightly tender. Drain any excess liquid.
  3. In a large bowl, combine the cooked zucchini, cheddar cheese, mozzarella cheese, Parmesan cheese, sour cream, mayonnaise, oregano, basil, salt, and pepper. Mix well until everything is evenly coated.
  4. Spread the zucchini mixture evenly into the prepared baking dish.
  5. In a small bowl, mix the breadcrumbs with the melted butter. Sprinkle this mixture evenly over the top of the casserole.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
  7. Let the casserole cool for a few minutes before serving. Enjoy warm as a side dish with your favorite grilled meats or as a standalone vegetarian meal.

Notes

To prevent a watery casserole, drain the zucchini well after cooking. You can also sprinkle it with a little salt and let it sit for 10 minutes before draining to remove excess moisture. Feel free to experiment with different cheeses like Gruyère or Swiss for added flavor. This casserole can be assembled ahead of time and refrigerated until ready to bake. For extra texture, sprinkle some crushed crackers or nuts on top before baking.
