- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick spray.
- In a large bowl, combine the sliced zucchini, corn kernels, halved cherry tomatoes, chopped onion, and minced garlic. Drizzle with olive oil and sprinkle with dried oregano, dried basil, salt, and pepper. Toss everything together until the vegetables are evenly coated.
- Transfer the vegetable mixture to the prepared baking dish, spreading it out evenly. Sprinkle the shredded mozzarella cheese over the top, followed by the grated parmesan cheese. Finish with a layer of breadcrumbs for that golden, crispy crust.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and golden brown. If the top isn’t browning enough, you can broil it for an additional 1-2 minutes, keeping a close eye to avoid burning.
- Remove the bake from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired, then slice and serve warm.
