  1. Prepare the broccoli by washing thoroughly and cutting florets into small, bite-sized pieces. Optionally blanch for 30 seconds in boiling water then transfer to ice bath for softer texture.
  2. Combine salad ingredients in a large mixing bowl: broccoli florets, sliced red onion, shredded carrot, dried cranberries, sunflower seeds, and red bell pepper if using. Gently toss to distribute evenly.
  3. Make the dressing by whisking together Greek yogurt, apple cider vinegar, honey, Dijon mustard, garlic powder, lemon juice, salt, and pepper in a separate bowl until smooth and creamy.
  4. Pour dressing over salad ingredients and toss gently until everything is well coated. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes
