- Prepare the fruits by washing the peaches and watermelon thoroughly. Cut the watermelon into 1-inch cubes, removing any seeds if necessary. Slice the peaches into thin wedges or bite-sized pieces.
- In a small bowl, whisk together the fresh lime juice, honey, and a pinch of sea salt until the honey dissolves completely. This simple dressing will enhance the natural sweetness of the fruits.
- Combine the watermelon and peach pieces in a large mixing bowl. Gently toss them together to distribute evenly.
- Pour the lime-honey dressing over the fruit mixture and add the chopped mint leaves. Toss gently to coat all pieces without crushing the delicate fruits.
- If using feta cheese, sprinkle it over the top just before serving. Chill for 10-15 minutes to allow flavors to meld, or serve immediately for maximum crispness.
Notes
Choose ripe but firm fruits for best texture. Prep fruits up to 2 hours ahead and store separately, combining with dressing just before serving. Salad pairs well with grilled meats and makes an excellent side for summer BBQs.
