- Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened and translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the rice to the saucepan and stir constantly for 2 minutes until the grains are lightly toasted and coated with oil. This step helps prevent the rice from becoming mushy.
- Pour in the vegetable broth, lemon juice, and lemon zest. Add the dried oregano, dill, salt, and pepper. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes.
- Remove from heat and let the rice stand covered for 5 minutes. This allows the grains to absorb any remaining liquid and become perfectly fluffy. Fluff with a fork and stir in the fresh parsley.
- If using pine nuts, toast them in a dry skillet until golden brown and sprinkle over the rice before serving. Garnish with additional lemon wedges and fresh herbs.
Notes
Use fresh lemon juice rather than bottled for best flavor. Don't skip the toasting step as it adds nutty flavor and helps rice maintain structure. For stronger lemon flavor, add extra lemon juice at the end of cooking.
