  • 4 ripe peaches, halved and pitted
  • 8 oz burrata cheese
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/4 cup fresh basil leaves
  • Salt and freshly ground black pepper to taste
  • Optional: toasted pine nuts or almonds for crunch

  1. Preheat your grill or grill pan to medium-high heat. Brush the peach halves with a little olive oil and place them cut-side down on the grill. Grill for 2-3 minutes until you see grill marks and the peaches begin to soften. Flip and grill for another 1-2 minutes. Remove from the grill and let them cool slightly.
  2. In a small saucepan, combine the balsamic vinegar and honey. Simmer over low heat for 5-7 minutes until the mixture thickens slightly and becomes syrupy. Remove from heat and let it cool.
  3. Arrange the grilled peach halves on a serving platter. Tear the burrata cheese into chunks and place it around the peaches. Drizzle the balsamic glaze over the top, followed by a drizzle of olive oil. Scatter fresh basil leaves on top and season with salt and pepper. Add toasted pine nuts or almonds for extra crunch if desired.

Notes

Choose ripe but firm peaches for grilling. Assemble the salad just before serving for the best texture and flavor. For a heartier dish, serve over a bed of arugula or mixed greens.
