Ingredients

Ingredients
  • ½ head green cabbage, thinly sliced
  • 2 large carrots, peeled and shredded
  • ½ red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • ¾ cup high-quality mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon celery seed
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Method

Instructions
  1. Begin by thinly slicing the cabbage using a sharp knife or mandoline slicer. Place the sliced cabbage in a large mixing bowl. Peel and shred the carrots using a box grater, then add to the bowl. Thinly slice the red onion and chop the fresh herbs, adding everything to the cabbage mixture.
  2. In a separate bowl, combine mayonnaise, sour cream, apple cider vinegar, Dijon mustard, honey, celery seed, and garlic powder. Whisk until smooth and well-combined. Season with salt and freshly ground black pepper to taste.
  3. Pour the creamy dressing over the cabbage mixture and toss thoroughly to coat all ingredients evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving.

Notes

For the crispiest coleslaw, slice vegetables uniformly and avoid overhandling. The dressing combination of mayonnaise and sour cream creates richer flavor than mayonnaise alone. Chill for at least 1 hour to allow flavors to meld while maintaining crunch.
