- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to preheat as well. Roll out your pizza dough on a floured surface to your desired thickness, typically 12-14 inches in diameter. Transfer to a pizza peel or baking sheet lined with parchment paper.
- Heat 1 tablespoon olive oil in a skillet over medium heat. Add the sausage meat, breaking it up with a spoon, and cook until browned and cooked through (about 6-8 minutes). Add minced garlic during the last minute of cooking. Remove from heat and set aside.
- Brush the pizza dough with remaining olive oil, leaving a 1-inch border for the crust. Spread the crushed tomatoes evenly over the dough. Sprinkle half the mozzarella cheese, followed by the cooked sausage mixture and red onion slices. Top with feta cheese crumbles and remaining mozzarella.
- Transfer the pizza to your preheated oven (or onto the pizza stone) and bake for 12-15 minutes, or until the crust is golden brown and cheese is bubbly. For authentic brick oven pizza results, bake at the highest temperature your oven can safely reach.
- Remove from oven and immediately drizzle with honey. Garnish with fresh basil leaves and a sprinkle of red pepper flakes if desired. Let rest for 2-3 minutes before slicing.
Notes
Use high-quality pizza dough and let it come to room temperature for easier stretching. The hotter your oven, the better the crust. The combination of spicy sausage, salty feta, and sweet honey creates the perfect flavor balance.
