- Heat olive oil in a large saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the rice to the pan and stir constantly for 2-3 minutes until the rice becomes slightly translucent around the edges. This step helps the rice absorb flavors better and prevents it from becoming mushy.
- Pour in the vegetable broth, lemon juice, and lemon zest. Add the dried oregano, red pepper flakes, cayenne pepper, salt, and black pepper. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
- Remove the pan from heat and let it sit covered for 5 minutes. This allows the rice to steam and become perfectly fluffy. Fluff the rice with a fork, then gently fold in the fresh parsley and dill.
- Transfer the rice to a serving dish and garnish with additional fresh herbs and lemon wedges. Serve immediately while hot for the best flavor and texture.
