- In a large mixing bowl, combine all the prepared fruits - strawberries, pineapple, blueberries, grapes, kiwi, and mango.
- In a small bowl, whisk together the honey, fresh lime juice, lime zest, and vanilla extract until well combined and slightly emulsified.
- Pour the honey lime dressing over the fruit mixture and gently toss to coat all the fruit pieces evenly.
- Add the chopped mint leaves and gently fold them into the fruit salad.
- Refrigerate for at least 30 minutes to allow the flavors to meld together and the fruit to chill.
- Serve chilled as a refreshing side dish or light dessert.
Notes
Use ripe but firm fruits that hold their shape. Adjust dressing to taste - more honey for sweetness or more lime for zing. Add mint just before serving for best flavor. Best enjoyed within 24 hours.
