  • 2 cups fresh strawberries, hulled and quartered
  • 2 cups fresh pineapple chunks
  • 1 cup fresh blueberries
  • 1 cup green grapes, halved
  • 2 kiwi fruits, peeled and sliced
  • 1 mango, peeled and cubed
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1/4 teaspoon vanilla extract

  1. In a large mixing bowl, combine all the prepared fruits - strawberries, pineapple, blueberries, grapes, kiwi, and mango.
  2. In a small bowl, whisk together the honey, fresh lime juice, lime zest, and vanilla extract until well combined and slightly emulsified.
  3. Pour the honey lime dressing over the fruit mixture and gently toss to coat all the fruit pieces evenly.
  4. Add the chopped mint leaves and gently fold them into the fruit salad.
  5. Refrigerate for at least 30 minutes to allow the flavors to meld together and the fruit to chill.
  6. Serve chilled as a refreshing side dish or light dessert.

Notes

Use ripe but firm fruits that hold their shape. Adjust dressing to taste - more honey for sweetness or more lime for zing. Add mint just before serving for best flavor. Best enjoyed within 24 hours.
