  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners and set aside.
  2. In a medium bowl, whisk together 1 ½ cups flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Alternate adding the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Gently fold in the diced peaches.
  5. In a small bowl, combine brown sugar, rolled oats, ¼ cup flour, and cinnamon. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  6. Spoon the batter into the prepared cupcake liners, filling each about ⅔ full. Sprinkle a generous amount of the crumble topping over each cupcake.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
