- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry sheet on a lightly floured surface to about 1/4-inch thickness. Transfer the pastry to the prepared baking sheet.
- In a bowl, mix the ricotta cheese, grated Parmesan, egg, salt, and pepper until smooth and well combined.
- Spread the ricotta mixture evenly over the puff pastry, leaving a 1-inch border around the edges. Arrange the sliced heirloom tomatoes on top of the ricotta mixture. Fold the edges of the pastry inward to create a rustic tart shape.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the ricotta is set.
- While the tart is baking, mix the chopped basil, olive oil, and minced garlic in a small bowl. Once the tart is out of the oven, drizzle this mixture over the top.
- Let the tart cool slightly before slicing and serving. Enjoy it warm or at room temperature.
Notes
Choose a mix of heirloom tomatoes for a visually stunning and delicious tart. To avoid a soggy crust, blind-bake the puff pastry for 10 minutes before adding the ricotta mixture. For extra flavor, sprinkle balsamic glaze or red pepper flakes over the tart before serving. You can prepare the ricotta filling and slice the tomatoes ahead of time for convenience.
