Ingredients
  • 6 ripe tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper to taste
  • 1 baguette, sliced into 1/2-inch pieces
  • 2 tablespoons olive oil for brushing

Method

Instructions
  1. In a bowl, combine the diced tomatoes, chopped basil, minced garlic, extra virgin olive oil, balsamic vinegar, salt, and pepper. Mix well and let it sit for 10 minutes to allow the flavors to meld.
  2. Preheat your oven to 375°F (190°C). Brush the baguette slices with olive oil and place them on a baking sheet. Toast in the oven for 5-7 minutes or until golden and crisp.
  3. Spoon the tomato mixture onto the toasted bread slices. Serve immediately while the bread is still warm and crispy.

Notes

Choose ripe tomatoes for the best flavor. You can prepare the tomato mixture ahead of time and store it in the refrigerator. Toast the bread just before serving to keep it crisp.
