- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
- In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, salt, and pepper until well combined.
- Place the carrots and green beans in a large mixing bowl. Drizzle with olive oil and toss to coat evenly.
- Pour the honey butter mixture over the vegetables and toss until everything is well coated.
- Spread the vegetables in a single layer on the prepared baking sheet. Make sure they're not overcrowded to ensure even roasting.
- Roast for 20-25 minutes, stirring halfway through, until the carrots are tender and the green beans are crisp-tender with slightly caramelized edges.
- Remove from oven and transfer to a serving dish. Garnish with fresh parsley if desired.
Notes
For extra crispy vegetables, make sure they're completely dry before tossing with oil. Add a tablespoon of balsamic vinegar to the glaze for a tangy twist, or sprinkle with toasted almonds before serving for added crunch. You can prepare the vegetables and glaze up to a day in advance and store separately in the refrigerator.
