- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Toss gently to coat the peaches evenly. Set aside.
- In another large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
- Pour the boiling water over the flour mixture and stir until just combined. The dough will be sticky.
- Pour the peach mixture into a 9x13-inch baking dish. Drop spoonfuls of the dough evenly over the peaches. Spread the dough gently with a spatula to cover as much of the peaches as possible.
- Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the crust is golden brown and the peach filling is bubbly.
- Allow the cobbler to cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
Use ripe but firm peaches for the best texture. Ensure butter is cold for a flaky crust. Adjust spices to taste and consider adding ginger or cardamom for a unique twist. The peach filling can be prepared ahead of time and refrigerated.
