- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix with an electric mixer on medium speed for about 2 minutes until the batter is smooth and well combined.
- Carefully pour in the boiling water and mix on low speed until the water is fully incorporated. The batter will be thin – this is normal and will result in a moist cake.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For an extra fudgy texture, use Dutch-process cocoa powder. The boiling water helps bloom the cocoa powder, intensifying the chocolate flavor. Don't skip this step! The cake pairs beautifully with powdered sugar or chocolate buttercream.
