  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 large onion, diced
  • 1 bell pepper, diced (any color)

  • 3 tablespoons honey
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • Salt to taste

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for 5-6 minutes until nicely browned. Remove the sausage from the skillet and set aside.
  2. In the same skillet, add the diced onion and bell pepper. Cook for 4-5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the rice, Cajun seasoning, smoked paprika, and black pepper. Cook for 2 minutes, stirring constantly to coat the rice with the seasonings and oil.
  4. Pour in the chicken broth and honey, then return the browned sausage to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and liquid is absorbed.
  5. Remove from heat and let stand covered for 5 minutes. Fluff the rice with a fork, stir in the fresh parsley, and season with salt to taste. Serve hot and enjoy!

Notes

Choose high-quality sausage for best flavor, don't skip browning the sausage for depth of flavor, and use long-grain white rice for optimal texture. For extra heat, add cayenne pepper or red pepper flakes.
