Ingredients

Ingredients
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1 tablespoon fresh lemon juice
  • Fresh parsley for garnish (optional)

Method

Instructions
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Wash the green beans thoroughly and pat them completely dry with paper towels. Trim the ends off the green beans if they haven't been pre-trimmed.
  3. In a large bowl, toss the green beans with olive oil, making sure each bean is lightly coated. Add the minced garlic, salt, pepper, and paprika if using. Toss again to distribute the seasonings evenly.
  4. Spread the green beans in a single layer on your prepared baking sheet. Avoid overcrowding - this ensures they roast rather than steam. Roast for 12-15 minutes, or until the beans are tender-crisp and starting to develop golden brown spots.
  5. Remove from oven and immediately sprinkle with grated parmesan cheese and drizzle with fresh lemon juice. Toss gently to coat while still hot. The residual heat will melt the cheese beautifully.
  6. Transfer to a serving dish, garnish with fresh parsley if desired, and serve immediately while hot and crispy.

Notes

For the crispiest results, make sure your green beans are completely dry before tossing with oil. Don't skip the fresh lemon juice at the end - the acidity brightens all the flavors. If you prefer extra crispy beans, you can turn on the broiler for the last 1-2 minutes of cooking, but watch carefully to prevent burning.
