Instructions
- Preheat your oven: Set it to 375°F (190°C) to ensure it's ready for baking.
- Prepare the peaches: In a large bowl, combine the sliced peaches with 1/2 cup of sugar and cinnamon. Mix well and set aside.
- Melt the butter: Place the butter in a 9x13-inch baking dish and melt it in the preheated oven. Once melted, remove the dish from the oven.
- Make the batter: In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Stir in the milk and vanilla extract until the batter is smooth.
- Assemble the cobbler: Pour the batter over the melted butter in the baking dish. Do not stir. Spoon the peach mixture evenly over the batter.
- Bake: Place the dish in the oven and bake for 40-45 minutes, or until the top is golden brown and the cobbler is bubbly.
- Serve warm: Let it cool slightly before serving. Enjoy with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
Use fresh, ripe peaches for the best flavor. For a lighter version, substitute half of the butter with coconut oil. Enhance the flavor by adding a pinch of nutmeg or allspice to the peach mixture. Store leftovers in the refrigerator for up to 3 days.
