- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes with an electric mixer)
- Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined, scraping down the sides of the bowl as needed
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined
- Stir in the rolled oats and any optional add-ins like raisins or chocolate chips
- Using a cookie scoop or tablespoon, drop rounded balls of dough (about 2 tablespoons each) onto the prepared baking sheets, spacing them about 2 inches apart
- Bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly underdone
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
Notes
For even thicker cookies, chill the dough for 30 minutes before baking. Don't overmix the dough - mix just until ingredients are combined. Use room temperature ingredients for proper creaming. Remove cookies from oven when they look slightly underdone in the center for perfect softness.
