Ingredients

Ingredients
  • 8 oz (225g) pasta (such as fusilli, penne, or farfalle)
  • 1 pint (300g) cherry tomatoes, halved
  • 8 oz (225g) fresh mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 tablespoon honey or grape juice for a touch of sweetness

Method

Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper. If you prefer a sweeter dressing, add honey or grape juice.
  3. Combine Ingredients: In a large bowl, combine the cooked pasta, halved cherry tomatoes, mozzarella balls, and chopped basil.
  4. Toss with Dressing: Pour the dressing over the pasta mixture and gently toss to coat everything evenly.
  5. Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled and enjoy!

Notes

Use fresh ingredients for the best flavor. For a heartier meal, add grilled chicken, shrimp, or chickpeas. This salad can be made a day in advance and stored in an airtight container in the refrigerator.
