Ingredients

Ingredients
  • 2 cups cooked shredded chicken (rotisserie chicken works perfectly)
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup Buffalo sauce (adjust to taste)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup sliced green onions
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste

Method

Instructions
  1. Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the softened cream cheese, ranch dressing, and Buffalo sauce. Mix until smooth and well-combined.
  2. Add the shredded chicken, Monterey Jack cheese, cheddar cheese, garlic powder, smoked paprika, salt, and pepper. Stir until all ingredients are evenly distributed.
  3. Transfer the mixture to an oven-safe baking dish (an 8x8 inch dish works perfectly). Spread evenly and top with additional cheese if desired.
  4. Bake for 20-25 minutes, or until the dip is bubbly and the top is lightly golden brown. For an extra crispy top, broil for the last 2-3 minutes.
  5. Remove from oven and garnish with sliced green onions and crumbled blue cheese. Serve immediately with tortilla chips, celery sticks, or crackers.

Notes

Use pre-cooked rotisserie chicken for time savings and flavor. Adjust Buffalo sauce to control spice level. Can be prepared up to 24 hours in advance and refrigerated before baking.
