- Prepare your chicken by cooking boneless, skinless chicken breasts (boil, bake, or preferred method), seasoning with garlic powder, onion powder, and salt, then shred using two forks or stand mixer
- In a large mixing bowl, combine softened cream cheese, ranch dressing, and buffalo sauce until smooth and creamy, then fold in shredded chicken
- Stir in 3/4 cup shredded cheddar cheese and all mozzarella cheese, reserving remaining 1/4 cup cheddar for topping, mix until well combined
- Transfer mixture to oven-safe baking dish, sprinkle with remaining cheddar cheese, bake at 350°F (175°C) for 20-25 minutes until bubbly and golden brown
- Remove from oven, let rest 5 minutes, garnish with chopped green onions, serve warm with tortilla chips or celery sticks
