  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup grape juice (as a substitute for red wine)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

  1. In a large bowl, toss the cubed beef with flour, salt, and black pepper until evenly coated.
  2. Heat olive oil in a large pot over medium-high heat. Add the beef and sear until browned on all sides. Remove the beef from the pot and set it aside.
  3. In the same pot, add the diced onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.
  4. Pour in the beef broth and grape juice, scraping the bottom of the pot to release any browned bits. Stir in the tomato paste, thyme, and rosemary. Return the beef to the pot and bring to a simmer. Cover and cook on low heat for 1.5 hours, or until the beef is tender.
  5. Stir in the frozen peas and corn, and cook for an additional 5 minutes.
  6. Preheat your oven to 375°F (190°C). Transfer the beef and vegetable mixture to a large baking dish. Roll out the puff pastry sheet and place it over the top of the dish. Trim any excess pastry and crimp the edges to seal. Brush the top with the beaten egg for a golden finish.
  7. Bake for 25-30 minutes, or until the pastry is golden brown and flaky. Let it cool for a few minutes before serving.
