Ingredients

Ingredients
  • 4 cups cooked chicken, shredded (rotisserie chicken works perfectly)
  • 2 packages (16 oz total) cream cheese, softened
  • 1 ½ cups buffalo sauce (Frank's RedHot is classic)
  • 1 ½ cups ranch dressing
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese
  • ½ cup blue cheese crumbles (optional)
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Green onions or celery for garnish

Method

Instructions
  1. Prepare your chicken by shredding cooked chicken, removing skin and bones if using rotisserie chicken
  2. Combine softened cream cheese, ranch dressing, sour cream, and buffalo sauce in a large mixing bowl until smooth
  3. Add 1½ cups cheddar cheese, all mozzarella cheese, blue cheese (if using), garlic powder, onion powder, smoked paprika, salt, and pepper - mix until evenly distributed
  4. Gently fold in shredded chicken until evenly coated with the creamy cheese mixture
  5. Transfer mixture to a 9x13 inch baking dish, sprinkle remaining ½ cup cheddar cheese on top, and bake at 375°F for 25-30 minutes until bubbly and golden brown
  6. Remove from oven, let rest for 5 minutes, garnish with green onions or celery, and serve warm

Notes

Make ahead tip: Prepare dip up to 24 hours in advance (except topping cheese), refrigerate, then add topping cheese and bake when ready. Adjust spice level with mild/medium/hot buffalo sauce. Serve warm in slow cooker for parties.
