- Prepare your chicken by shredding cooked chicken, removing skin and bones if using rotisserie chicken
- Combine softened cream cheese, ranch dressing, sour cream, and buffalo sauce in a large mixing bowl until smooth
- Add 1½ cups cheddar cheese, all mozzarella cheese, blue cheese (if using), garlic powder, onion powder, smoked paprika, salt, and pepper - mix until evenly distributed
- Gently fold in shredded chicken until evenly coated with the creamy cheese mixture
- Transfer mixture to a 9x13 inch baking dish, sprinkle remaining ½ cup cheddar cheese on top, and bake at 375°F for 25-30 minutes until bubbly and golden brown
- Remove from oven, let rest for 5 minutes, garnish with green onions or celery, and serve warm
Notes
Make ahead tip: Prepare dip up to 24 hours in advance (except topping cheese), refrigerate, then add topping cheese and bake when ready. Adjust spice level with mild/medium/hot buffalo sauce. Serve warm in slow cooker for parties.
