  • 1 very ripe banana (the darker, the better!)
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup semi-sweet chocolate chips
  • ¼ cup milk or buttermilk

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and set aside. Mash the ripe banana in a medium bowl until smooth.
  2. In a large mixing bowl, combine the mashed banana, melted butter, eggs, and vanilla extract. Whisk until well combined and smooth.
  3. In a separate bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, and salt until evenly incorporated.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix - a few flour streaks are okay. Stir in the milk until the batter is smooth.
  5. Fold in the chocolate chips gently, reserving a small handful to sprinkle on top of the loaf before baking.
  6. Pour the batter into your prepared loaf pan and sprinkle the reserved chocolate chips on top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the banana bread to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely. Slice and serve warm or at room temperature.

Notes

Use very ripe bananas for best flavor, don't overmix the batter, check for doneness when it pulls away from pan edges, store in airtight container for up to 4 days
