- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season chicken pieces with salt, pepper, and 1 tablespoon of Cajun seasoning. Cook for 5-6 minutes until golden brown. Remove chicken and set aside.
- In the same pot, add onion and bell pepper. Cook for 3-4 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
- Add remaining Cajun seasoning and smoked paprika to the vegetables. Pour in chicken broth and scrape any browned bits from the bottom of the pan.
- Break spaghetti noodles in half and add to the pot. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes, stirring occasionally, until pasta is al dente.
- Return chicken to the pot. Stir in heavy cream and cheeses until melted and creamy. Garnish with fresh parsley before serving.
