  • 1 lb halal chicken breasts, cut into bite-sized pieces
  • 12 oz spaghetti noodles
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning blend
  • 1 teaspoon smoked paprika
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Method
 

Instructions
  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season chicken pieces with salt, pepper, and 1 tablespoon of Cajun seasoning. Cook for 5-6 minutes until golden brown. Remove chicken and set aside.
  2. In the same pot, add onion and bell pepper. Cook for 3-4 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
  3. Add remaining Cajun seasoning and smoked paprika to the vegetables. Pour in chicken broth and scrape any browned bits from the bottom of the pan.
  4. Break spaghetti noodles in half and add to the pot. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes, stirring occasionally, until pasta is al dente.
  5. Return chicken to the pot. Stir in heavy cream and cheeses until melted and creamy. Garnish with fresh parsley before serving.
