  • 6 bone-in, skin-on chicken thighs
  • 1.5 lbs baby potatoes, halved
  • 4 large carrots, peeled and cut into 2-inch pieces
  • 1 large onion, sliced
  • 8 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 2 tsp Italian seasoning
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/2 cup chicken broth
  • 2 tbsp fresh parsley, chopped

  1. Prepare the garlic butter sauce by combining melted butter, minced garlic, Italian seasoning, paprika, salt, and pepper in a small bowl. Mix well until all ingredients are fully incorporated.
  2. Arrange the sliced onions in the bottom of your slow cooker. This creates a natural rack that prevents the chicken from sticking and adds wonderful flavor to the dish.
  3. Place the chicken thighs on top of the onions, then arrange the potatoes and carrots around the chicken. Pour the garlic butter sauce evenly over everything, making sure each piece gets coated.
  4. Pour the chicken broth around the edges of the slow cooker (not directly over the chicken to keep the skin crispy). Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  5. During the last 30 minutes of cooking, if you prefer crispier chicken skin, you can transfer the chicken to a baking sheet and broil for 2-3 minutes. Garnish with fresh parsley before serving.

Notes

Don't overcrowd the slow cooker (no more than 2/3 full), layer vegetables that take longer to cook at the bottom, pat chicken dry for crispier skin, and for a creamier sauce add 1/4 cup heavy cream during last 30 minutes.
