Ingredients

Ingredients
  • 2 cups cooked chicken, shredded (rotisserie chicken works perfectly)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo sauce (like Frank's RedHot)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Method

Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish or similar oven-safe dish.
  2. In a large mixing bowl, combine the softened cream cheese, ranch dressing, buffalo sauce, garlic powder, and onion powder. Mix until smooth and well combined.
  3. Fold in the shredded chicken, 3/4 cup of the cheddar cheese, and the blue cheese (if using). Stir until everything is evenly coated with the creamy buffalo mixture.
  4. Transfer the mixture to your prepared baking dish and spread it evenly. Top with the remaining 1/4 cup cheddar cheese.
  5. Bake for 20-25 minutes, or until the dip is bubbling around the edges and the cheese on top is melted and lightly golden.
  6. Remove from oven and let it rest for 5 minutes. Garnish with chopped green onions before serving.

Notes

Use rotisserie chicken for convenience, adjust buffalo sauce for desired spice level, can be assembled ahead and refrigerated before baking
