- Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish or similar oven-safe dish.
- In a large mixing bowl, combine the softened cream cheese, ranch dressing, buffalo sauce, garlic powder, and onion powder. Mix until smooth and well combined.
- Fold in the shredded chicken, 3/4 cup of the cheddar cheese, and the blue cheese (if using). Stir until everything is evenly coated with the creamy buffalo mixture.
- Transfer the mixture to your prepared baking dish and spread it evenly. Top with the remaining 1/4 cup cheddar cheese.
- Bake for 20-25 minutes, or until the dip is bubbling around the edges and the cheese on top is melted and lightly golden.
- Remove from oven and let it rest for 5 minutes. Garnish with chopped green onions before serving.
Notes
Use rotisserie chicken for convenience, adjust buffalo sauce for desired spice level, can be assembled ahead and refrigerated before baking
