- Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish or similar-sized ovenproof dish.
- In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, vanilla extract, and lemon juice. Toss gently to coat the peaches evenly. Transfer the peach mixture to the prepared baking dish.
- In another bowl, mix the flour, rolled oats, brown sugar, and cinnamon. Add the cold, cubed butter and use your fingers or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping evenly over the peach mixture in the baking dish.
- Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
- Allow the cobbler to cool for a few minutes before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
Use ripe but firm peaches for the best texture and flavor. Ensure the butter is cold when making the crumble topping for a crispy texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
