  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups beef broth
  • 1 cup grape juice
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 cup frozen peas
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

  1. In a large bowl, toss the beef cubes with flour, salt, and black pepper until evenly coated.
  2. Heat olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set it aside.
  3. In the same pot, add the chopped onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  4. Pour in the beef broth and grape juice, scraping the bottom of the pot to release any browned bits. Stir in the tomato paste, thyme, rosemary, and bay leaf. Return the beef to the pot and bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 1.5 to 2 hours, or until the beef is tender.
  5. Stir in the frozen peas and cook for an additional 5 minutes. Remove the bay leaf.
  6. Preheat your oven to 375°F (190°C). Transfer the beef stew mixture to a large baking dish. Roll out the puff pastry sheet and place it over the top of the dish. Trim any excess pastry and crimp the edges to seal. Brush the top with the beaten egg for a golden finish.
  7. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and flaky.

Notes

Use well-marbled beef stew meat for the best flavor and tenderness. If the stew is too thin, mix a tablespoon of cornstarch with cold water and stir it into the stew before assembling the pot pie. Customize the vegetables to suit your taste. You can prepare the beef stew a day ahead and assemble the pot pie just before baking.
