  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste
  • 1 tbsp balsamic glaze (optional, for drizzling)

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface. Transfer it to the prepared baking sheet and prick the center with a fork to prevent excessive puffing.
  3. In a bowl, mix the ricotta cheese, Parmesan cheese, minced garlic, olive oil, basil, thyme, salt, and pepper. Spread this mixture evenly over the puff pastry, leaving a small border around the edges.
  4. Layer the thinly sliced tomatoes on top of the cheese mixture, slightly overlapping them. Season with a pinch of salt and pepper.
  5. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the tomatoes are tender.
  6. Drizzle with balsamic glaze if desired. Let the tart cool for a few minutes before slicing and serving.

Notes

Choose ripe but firm tomatoes like Roma or heirloom varieties for the best flavor and texture. Pat the tomato slices dry with a paper towel before arranging them on the tart to prevent a soggy crust.
