Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface. Transfer it to the prepared baking sheet and prick the center with a fork to prevent excessive puffing.
- In a bowl, mix the ricotta cheese, Parmesan cheese, minced garlic, olive oil, basil, thyme, salt, and pepper. Spread this mixture evenly over the puff pastry, leaving a small border around the edges.
- Layer the thinly sliced tomatoes on top of the cheese mixture, slightly overlapping them. Season with a pinch of salt and pepper.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the tomatoes are tender.
- Drizzle with balsamic glaze if desired. Let the tart cool for a few minutes before slicing and serving.
Notes
Choose ripe but firm tomatoes like Roma or heirloom varieties for the best flavor and texture. Pat the tomato slices dry with a paper towel before arranging them on the tart to prevent a soggy crust. Sprinkle some red pepper flakes for a hint of spice or add crumbled feta cheese for extra tanginess. You can prepare the tart a few hours ahead and reheat it in the oven before serving.
